Seared and Steamed Broccoli
by: Chef Mike Shannon
Ingredients
2 broccoli crowns
1 Tablespoon butter, melted
2 Tablespoons lemon olive oil
½ teaspoon Kosher salt
¾ cup vegetable or chicken broth
2 Tablespoons freshly grated Parmesan cheese Seared and Steamed Broccoli
Instructions
Prepare the Broccoli
Trim the stem of each broccoli crown and cut each crown in half from the stem side. Turn on ventilation.
Prepare the Pan
Coat the bottom of a medium 10-inch lidded skillet or sauté pan with melted butter. Alternatively, briefly heat the skillet, add the butter, and turn off the heat.
Season the Broccoli
Place all four broccoli pieces in the skillet, making sure the lid fits tightly. Trim the broccoli as necessary. Drizzle the lemon olive oil over each piece and season with Kosher salt. Cover with the lid.
Sear and Steam
Heat the covered skillet over medium heat, power level 7–7.5 on the Wolf Induction Cooktop, for 7–8 minutes without lifting the lid. Carefully remove the lid, add the broth, and bring to a simmer. Cover, reduce to medium-low, power level 3–3.5, and cook for an additional 5–6 minutes.
Finish
Let stand for 2 minutes. Serve with freshly grated Parmesan cheese.
Chef's Note
Regular olive oil can be substituted for lemon olive oil. To make your own, combine 1 teaspoon fresh lemon juice with 2 Tablespoons olive oil and whisk until completely combined.
