Hot Honey

Ingredients
2 cups honey (approximately 1 pint)
1 to 2 teaspoons red pepper flakes
1 fresh chili pepper, thinly sliced
2 Tablespoons fresh orange juice
1 teaspoon apple cider vinegar
1/8 teaspoon Kosher salt
Instructions
Warm the Honey
Place the honey in a small saucepan and set it on the Wolf Cooktop using the simmer setting or low heat. Gently warm the honey until it becomes fluid, making sure it does not come to a boil.
Infuse the Honey
Add the red pepper flakes and fresh chili pepper, if using. Allow the mixture to steep over low heat for 25 to 30 minutes to develop the flavor.
Add the Finishing Ingredients
Remove from the heat and stir in the orange juice, apple cider vinegar, and Kosher salt.
Cool and Store
Allow the honey to cool slightly, then strain for a smooth texture or leave the pepper flakes in for a more rustic finish. Transfer the honey to a jar and store at room temperature.
