Caramelized Apple and Pear Sauce
by: Chef Ben Davis
Ingredients
3 tablespoons unsalted butter
2 apples (Honeycrisp, Granny Smith, or Pink Lady), peeled and diced
2 pears (Bosc or Comice), peeled and diced
¼ to ⅓ cup light brown sugar
juice of 1 lemon
1 cinnamon stick
1 vanilla bean, split and scraped
2 to 3 tablespoons bourbon
a pinch of Kosher salt
Instructions
Brown the Butter
In a deep-sided pan, melt the butter over medium-high heat until it just begins to brown.
Cook the Fruit
Add the diced apples and pears, tossing to coat them evenly in the butter. Cook for 4 to 5 minutes.
Add the Sugar and Spices
Add the brown sugar, lemon juice, cinnamon stick, vanilla bean seeds, and pod. Stir to combine and continue cooking until the sugar has melted and coated the fruit.
Reduce the Sauce
Reduce the heat and cook until the sauce begins to bubble and thickens slightly.
Add the Bourbon
Add the bourbon and carefully ignite it. Once the flames have subsided, reduce the heat and simmer to cook off the excess alcohol.
Season and Serve
Add a pinch of Kosher salt and stir to combine. Serve as a topping for ice cream, cheesecake, or other desserts.
